Easy 2 Ingredient Strawberry Lemonade Popsicles

Emma has been asking to make "pop-akles" for days so while I was at my local grocery store, I headed down the juice aisle to see what yummy fruit combination I could find. 

I LOVE V8 Splash juice. Love. Judge away. 

And strawberry lemonade and summer just go hand in hand. 

I knew I could sneak in some fresh strawberries to I threw both in the cart!

We used this Popsicle mold from IKEA ($2!), but if Ikea isn't nearby, you can grab it from Amazon for less than $7.

And seriously, they are the easiest things ever!

1. Wash and cut the strawberries.
I wanted big chunks but you can choose how much you chop them up.
2. Distribute the strawberries into your popsicle molds.
3. Fill molds with strawberry lemonade.
4. Add the "handles".
5. Freeze.  Ours took about 4 hours.
6. Enjoy!
You may need to run them under water to loosen them up!

The world knows I am obsessed with my stroller and I have read some horror stories about strollers getting destroyed during airplane transport.  I just couldn't risk anything happening to "my baby".  Even though I knew I'd have my LILLEbaby airflow carrier with me for the the little guy, I also knew that I would need a stroller for the princess. Lots of walking, some late nights, and big crowds where she could easily get lost... I needed to have a mode of transportation for her that did not require me carrying her while wearing her brother.

In addition to the double stroller we rented, we had milk, cereal, yogurt, and fresh produce delivered to the hotel room.  It made a quick breakfast before the park a breeze!

2. It's so much more affordable than Disney stroller rentals. We rented the City Mini GT Double stroller for a total of $80 for an entire week.

3. Much more comfortable than a Disney stroller!

4. You need a double, even if you only have one kid. 

Half the time I was wearing Tyler in our LILLEbaby airflow carrier, but I still needed a place to put all the "stuff" we would need over the day: diapers, wipes, change of clothes, small snacks to hold the kids over, ponchos, etc.  That's a lot to carry on my shoulder while also wearing a 20 lb little guy. 

We have a TON of vacation photos with my oversized purse (similar) taking up the second seat. Either kid is on one side and the bag is on the other.  Emma wanted to walk around for most of the day but there were times when she needed a place to sit... or sleep...

5. You can't remove Disney strollers from the parks. Which means if the above had happened in a Disney Park stroller, someone would have been carrying a sleeping child the whole way home. You do have to fold up the strollers on the buses but the ability to keep her in the stroller as we left the park and waited for the buses and being able to put her back in it from the resort bus stop to our room was priceless. 

We would not have survived our Disney vacation without this amazing stroller! Whether it was a napping place for the little guy while I went on rides with the princess, a purse holder, or a way to get through the parks quickly without the 4 year old being distracted by everything, it was perfect for us!

30 by 30 : 7 months to go!

Two more items off the 30 by 30 list! I'm down to just 7 months and I KNOW I won't complete it all but I'm getting closer!

18. Go to Vegas for my 30th! (The 29th can count too right?! I just wanted to go!)

I went for my 29th birthday and it was AMAZING!

30. Make a list of 100 things that make me happy.

I assigned this as a project for my Juniors and I of course, did it alongside them.  It was so fun!

So, to update:

1. Be an English Teacher (have my own classroom)

2. Have baby #2.

3. Buy a house.

4. Own a pair of Manolos. (Really not my lifestyle anymore-- might be a pair of Jack Rogers instead)

5. See a show ON Broadway.

6. Run a 5k.

7. Weigh 150 lbs again. (muscle weighs more than fat-- this will never happen. Maybe we'll say, be a size 8/10)

8. Get my Masters degree.

9. Do a photography challenge for a month.

10. Pay for someone else in the drive through behind me.

11. Get my palm read/fortune told.

12. Go to a blogging conference.

13. Re-learn how to sew and make a blanket from Em's old clothes. (maybe I'll just get a blanket done, I have no place to set up my sewing machine and I totally don't trust myself with such important items)

14. Own a car that's less than 5 years old.

15. Go for a weekend trip to Martha's Vineyard.

16. Adopt a family for Christmas.

17. Buy a bicycle. A regular old fashioned bicycle.

18. Go to Vegas for my 30th! (The 29th can count too right?! I just wanted to go!)

19. Start (and keep) a vegetable garden.

20. Spend a day getting pampered.

21. Learn to crochet or knit. (Why was this important to me?!)

22. Buy brand new furniture.

23. Have dinner out with my husband at Top of the Hub or go to Blue Man Group (he's never been!)

24. Wear a bikini to the beach... no cover up.

25. Bring Emmalee to see the Rockafeller Christmas Tree.

26. Do a boudoir photo shoot.

27. Go to a group fitness class.

28. Buy an original piece of art and frame it in our house.

29. Go on our first family vacation (must be out of state, can't be CT)

30. Make a list of 100 things that make me happy.
